Warming up with a hot cup of tea is the perfect way to wind down after a long//stressful day. We all know drinking tea is a given — but have you tried cooking with tea? [Mind blown. #BOOM]. Cooking with tea is a great way to get all the benefits of + adds a nice twist of taste to whatever you are making! I love starting my day with hot tea, so when trying to think of a recipe I of course turned straight to breakfast — tea infused muffins. You guys know how much we are obsessed with Tiesta Tea + if you haven’t tried it yet, it’s about time you do! They have tons [+ I mean TONS] of flavors for everyone — my personal favs: Minty Winter Wonderland + Fruity Pebbles + Chunky Watermelon! It was hard to choose one to use for the recipe but, I went with my absolute favorite Blueberry Wild Child — #obsessed.
Warning: Underneath that pretty greek yogurt *frosting* it’s not very pretty. The mixture of the tea + blueberries turned the muffins…green. So don’t worry if yours turn out that color, too : )
1 cup Whole Wheat Flour
⅓ cup Organic Coconut Flour
1 cup mixed Berries [I used frozen from Trader Joes]
1 cup Unsweetened Almond Milk
¼ cup Unsweetened Applesauce
¼ cup Egg Whites
1 TBSP Honey
1 TSP Vanilla Extract
1 TSP Cinnamon
1 TSP Baking Soda
1 TSP Baking Powder
⅔ cup hot water
2 TBSP Blueberry Wild Child Tiesta Tea
For Coconut Blueberry Yogurt *Frosting*
1 TBSP Coconut Oil
½ cup Plain Greek Yogurt
½ cup Blueberries
1 TBSP Honey
Coconut Chips for topping
1] Preheat oven to 375 F. Spray 12 count muffin tin with non-stick spray [new obsession — Trader Joe’s coconut oil spray *swoon*]. Using a tea filter//tea infuser steep 2 TBSP Blueberry Wild Child Tiesta Tea in hot water for 5-8 minutes [*the longer you let it steep the deeper the flavor will be!].
4] While the muffins bake — it’s time to make the topping! Combine ½ cup Greek Yogurt + ½ cup blended blueberries [I used frozen blueberries + threw them in the blender with a little bit of water to get it blending !]. Mix in melted coconut oil + melted honey. // below: what the muffins look like without frosting ; )
6] ++ EAT UP! *This recipe makes 12 muffins — store in an airtight container in the refrigerator + along with the yogurt topping. If you like to eat your muffins warm, only top muffins that you want to eat at that time + you can always heat up the muffins you want + top them later!
