Crispy Buffalo Cauliflower Tacos
Anyone else agree that Taco Tuesday should be every day? These Crispy Buffalo Cauliflower Tacos will convince you if you’re not on board yet!
INGREDIENTS
- 2.5 cups Cauliflower [chopped into bite sized pieces]
- 1 tbsp Olive Oil
- 1 tsp Garlic Powder
- 1/2 cup + 1 tbsp Buffalo Sauce [divided]
- Salt + Pepper to taste
- 1 cup Lacinato Kale [chopped]
- 1/2 Avocado
- Cilantro [chopped]
- Whole Wheat or Corn Tortillas
DIRECTIONS
#1] Preheat oven to 400 degrees + line a baking sheet with foil or cooking spray
#2] Prep cauliflower + kale — chop both into bit size pieces
#3] Add cauliflower to a medium sized mixing bowl with the olive oil, garlic powder, salt/pepper, + 1/2 cup buffalo sauce
#4] Put cauliflower on baking sheet [leaving room for the kale] + cook for 20 minutes, until cauliflower is tender
#5] Take baking sheet out, add kale, + put back in for 1-2 minutes, until kale becomes crispy
#6] Move cauliflower back in the mixing bowl + coat with additional 1 tbsp of buffalo sauce
#7] Heat tortillas over the stove or in the microwave [20-30 seconds should be perfect]
#8] Add kale + cauliflower to the tortillas, top with avo + chopped cilantro + serve!
*Should make about 3 large tacos!
