I’ve been lovin’ on blueberries lately [hence the Vanilla Bluebs Smoothie + Blueb Cider], so when I went to do the Rise + Run workout ++ asked my boyfriend to come up with somethin’ fun for brunch yesterday — I was blown away. You guys know I love my hash, but this took it to a whole different level. You seriously must — I repeat must — try this. The contrast of the savory spices + the sweet blueberry sauce is what makes this brunch out of this world. If you are veg, just take out the chicken sausage. Easy peasy.
– 1 Chicken Sausage [I used spicy jalepeno chicken sausage from TJ’s]
– 2/3 Bell Pepper
– 1 Medium Sized Sweet Potato
– 1/2 Onion
– 2 Eggs
– 1 tbsp Paprika [make sure you get mild paprika]
– 1 tsp Cumin
– 2 tsp Chili Powder
– Salt + Pepper [to taste!]
BLUEBERRY CIDER SAUCE
– 2 oz Blueberries
– 1/4 cup Sugar [*depending on how sweet you want it, add more//less]
– 1/2 Cinnamon Stick
– 1/4 cup Apple Cider Vinegar
– 1/4 cup Water
– 1/2 tbsp Butter
– 2 tsp Allspice
1] Preheat oven to 350. Place sweet potato + red bell pepp + onions on a baking sheet — drizzle olive oil + sprinkle spices on veggies. Coat evenly! Cook for 15//20 minutes — ’till tender.
*Recommendation — Prior to roasting, heat a little oil in pan + throw in sweet potatoes for 30 seconds, then peppers + onions. Mix + toss with spices for 1 minute to coat veggies. Then, put veggies on cooking pan + cook for 10//15 minutes — ’till tender.
2] Make the Blueberry Cider Sauce [eee!] — Throw blueberries + water + apple cider vinegar in a small pot + simmer on low heat for 5-10 minutes [while veggies are roasting!]. Take a fork a mash blueberries up to get all the juices out. YUM. Then, throw in sugar + cinnamon stick + allspice [to taste]. Reduce the ingredients until you reach the consistency you like. We did it for ~5 minutes. Stir butter in slowly to finish.
3] Heat chicken sausage in a separate pan. These are already cooked, but I like to brown them a bit + get them crispy ; ) At the same time — cook eggs over easy on low heat. Once the sausage + eggs are ready, take veggies out of the oven + place all three items in a bowl. ++ DRIZZLE THE BLUEBERRY CIDER SAUCE ALL OVER.
