Blackberry Walnut + Brown Sugar Oats
We absolutely love oatmeal — there are so many flavor options ++ it’s a hearty food that will keep you full + energized. Oats don’t have to be solely a breakfast food either! They’re the perfect simple snack that’s easy to make to prepare for the upcoming week — especially if you bake the oats. This recipe just requires a bit of baking, which will give ya a chance to cross off a few to-do’s while they’re in the oven.
INGREDIENTS
*makes 4 servings
- 1 ¼ cups Rolled Oats
- 1 ½ tbsp Melted Coconut Oil
- ⅓ cup Chopped Walnuts
- ¾ cup Blackberries
- ½ tsp Baking Powder
- 2 tbsp Brown Sugar
- 1 tsp Vanilla Extract
- 1 ¼ cups Coconut Milk
DIRECTIONS
#1] Preheat the oven to 350℉. In a small, microwave safe bowl melt the coconut oil. Divide + pour the coconut oil between four 8-ounce mason jars. Swirl the jars so that the oil coats all sides — this will keep the oatmeal from sticking! In a large bowl, mix the oats + baking powder + brown sugar. Pour in the coconut milk + vanilla extract into the bowl + stir until combined.
#2] Fill the mason jars with alternating layers of blackberries, walnuts + the oat mixture [reserve some of the berries + nuts for garnishing after baking]. Place the jars on a baking sheet + bake for about 25-30 minutes, or until the milk has been absorbed! Garnish the oats with the extra berries + nuts + a pinch of brown sugar!
#3] Once the jars have cooled, place a lid on ‘em + store in the fridge! You can also make the oats in 4 ounce size jars if you’re looking for an ultra portable mini-snack!
