Birthday Cake Protein Muffins

To celebrate CHAARG’s 8th birthday we wanted to make a sweet treat that you could eat every day of the week! These muffins are a healthier spin on funfetti cupcakes + taste absolutely amazing, you’ll never know they’re good for you. ; ) These muffins do take on banana bread qualities so if that’s your thing then this is the recipe for you!

*makes 12 muffins

  • 1 cup Mashed Banana [about 2 large bananas]
  • 1 Flax Egg [1 tbsp Ground Flax mixed with 2.5 tbsp Water]
  • 4 tbsp Agave Nectar [or Maple Syrup]
  • 3 tbsp Melted Coconut Oil
  • 1 tsp Vanilla Extract
  • 3/4 cup Oat Flour
  • 1/2 cup Vanilla Protein Powder
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/4 cup Rainbow Sprinkles

#1] Preheat oven to 350 degrees + spray a standard muffin tin with cooking spray.

#2] In a bowl, mash bananas until smooth. Stir in flax egg, agave nectar, coconut oil, and vanilla extract until combined.

#3] Add in oat flour, protein powder, baking powder, and baking soda and combine until batter is formed

#4] Gently fold in sprinkles, avoid mixing too much

#5] Pour batter into cups, filling 3/4 of the way. Bake muffins for 15 minutes or until golden brown and a toothpick comes out clean when inserted in the center of the muffin!
