Mediterranean Asparagus Salad
This mediterranean inspired salad is full of all the colors + nutrients. If you want to make it more like *Greek salad* — sub the dressing for something a little more Greek. But, we love this sweet, tangy dressing with it! *PS — this is our staple dressing, it pairs well with literally anything + it’s so simple to make!

INGREDIENTS
- 6 stalks of Asparagus
- 1/2 can Chickpeas
- 7-8 Cherry Tomatoes
- 1 handful of Arugula
- 1/3 Cucumber
- 2 tbsp Kalamata Olives
- Optional: 1 tbsp Feta Cheese
- For the dressing: 2 tsp Apple Cider Vinegar, juice from 1/2 lemon, 1 tbsp Maple Syrup
- Basics: Olive Oil, Salt/Pepper
DIRECTIONS
#1] Chop asparagus into 1 inch pieces; heat 1 tsp olive oil in a skillet + saute asparagus for about 5-7 minutes [until it’s bright green, but still crunchy]
#2] Drain + rinse chickpeas; Chop cucumber + cut tomatoes in half
#3] Add apple cider vinegar, lemon juice, + maple syrup into a small mixing bowl + whisk together well with a fork. Add salt + pepper to taste
#4] Add arugula, asparagus, chickpeas, tomatoes, cucumber, olives, + dressing into a bowl, ++ MIX WELL!
#5] Top with feta + enjoy!
