Apple Cider Breakfast Quinoa
While we love a classic bowl of oatmeal, sometimes we like to switch things up + this breakfast quinoa is the perfect substitute! This fall breakfast bowl was inspired by apple cider + is super filling for your day ahead!
- 1/2 cup Quinoa
- 1 1/2 tsp Cinnamon [divided]
- 3 tbsp Maple Syrup [divided]
- 2 tbsp Almond or Coconut Milk
- 1 Apple [your choice!]
- 1 tsp Coconut Oil or Ghee
- Optional: Coconut Flakes or Granola for topping
#1] Cook quinoa according to package instructions [it should take about 10-15 minutes!]
#2] While quinoa is cooking, peel apple + dice into small cubes
#3] Heat coconut oil or ghee in a small pan. Once melted, add the cubed apple, 1 tbsp maple syrup, + 1/2 tsp cinnamon. Cook for about 6 minutes!
#4] After quinoa is complete, add 2 tbsp almond/coconut milk, 2 tbsp maple syrup, + 1 tsp cinnamon. Stir well + let cool for 2-3 minutes
#5] Add quinoa to a bowl + top with cinnamon apples + anything else you’d like! We added Trader Joe’s Coconut Crunch granola to ours!
