Cool Down With These 3 Easy Ice Cream Recipes this Summer
Whether you’re just sitting at home on a hot summer’s eve, having a bad day, or just craving something so deliciously sweet, a scoop of ice cream [or two ; )] solves ALL problems. With these three recipes that require only a few ingredients + a mixer ++ a little patience, you’ll be whipping up your own flavors of ice cream every day this summer!
INGREDIENTS
- 2 Medium Bananas [Frozen]
- 1 Tsp Vanilla Extract
- Chopped Nuts [optional for toppings]
- Chopped Fruits [optional for toppings]
- Whipped Cream [We love Reddi Whip’s Non-Dairy Almond Milk Whipped Cream]
DIRECTIONS
#1] Slice bananas into 1 cm pieces onto tray + freeze for at least 30 minutes
#2] Place the bananas in a food processor + blend until creamy
#3] Add Vanilla Extract + blend until well combined
#4] Fold in [optional] nuts// fruit + top with whipped cream
#5] Serve immediately + enjoy!
INGREDIENTS
- 2 cans Coconut Milk [chilled overnight]
- ½ cup Almond Milk or milk of choice [here’s a guide to some dairy free milks that you can choose from!]
- ⅔ cup Unsweetened Cacao Powder
- ⅛ tsp of Salt
- 1 tsp Vanilla Extract
- 1 ¾ Pitted Dates
DIRECTIONS
#1] Place a large mixing bowl in the freezer to chill for 20 minutes
#2] Add pitted dates into a food processor until a thick paste forms
#3] Pour coconut milk in the chilled mixing bowl
#4] Add in cacao powder, vanilla, milk of your choice, + half of the date paste until fully combined
#5] Taste + adjust flavors [more or less date paste//cacao powder//sweetener]
#6] Transfer to a parchment-lined freezer-safe tray or container and cover loosely with plastic wrap
#7] Freeze for a couple hours or until firm [for best results, freeze overnight!]
#8] Set out for about 10 minutes to soften + serve ++ enjoy!

- 1 cup or about 5-6 Whole Strawberries
- ¼ cup milk of choice
DIRECTIONS
#1] Place all ingredients in a food processor + pulse for about 1-2 minutes
#2] Transfer mixture to a freezer-safe container + freeze until firm
#3] Serve with toppings of your choice + enjoy!
