Whipped. Feta. Oh yeah, it’s a thing. ++ it tastes even better than it sounds. I discovered whipped feta about a year ago + have developed a deep, meaningful relationship with it ever since [too far? ; )].
It’s so simple, yet packs a surprising amount of tangy deliciousness! This is great if you are heading to a party + want to bring a crowd-pleasing appetizer! You can serve it with crackers, bagel chips, bread, veggies, + even fruit. I once had it at a restaurant served with roasted cauliflower florets — #SWOON. Oh + did I mention how QUICK + EASY this is? It takes 10-15 minutes, tops!
6 ounces Feta Crumbles
4 ounces Whipped Cream Cheese
2 cups Mixed Grape Tomatoes [sliced]
2-3 TBSP Olive Oil
Whole Wheat Tuscan Pane Slices [or any type of bread/cracker]
Lemon Garlic Seasoning [to taste]
Lemon juice [to taste]
*If you do not have whipped cream cheese you can try using regular. Whipped is easier to blend + you may have to blend longer if you use a type different than whipped.
1] Preheat your oven to a high broil. Slice the grape tomatoes + place on a foil lined pan. Drizzle with 2-3 tbsp olive oil — make sure all the tomatoes are coated evenly.
4] ++ let’s assemble! Start by taking a toasted piece of bread + spread a *generous* amount of whipped feta ; ). Top with the roasted tomatoes + sprinkle with lemon garlic seasoning! + share the deliciousness
