If you’re like me, you’ve discovered that granola is super easy to make + tastes amazing on much more than yogurt! You can mix together a batch from ingredients you have right this moment + a little bonus — this recipe is gluten free! This granola has a sweet + salty flavor, with a little hint of coconut. Its even amazing as a snack all on by itself! I paired the granola with dried apricot + mango to give it a lil’ taste of summer, but you can use any type of dried fruit or skip it altogether. The combo of different ingredients gives it an extra crunch, but the recipe is totally customizable! You can use a single type of nut or seed to suit what you already have!
The secret to achieving a granola with large clusters? Add an egg white! I know this sounds a little crazy, but trust me — it works! Adding it gives the granola a little extra crunch + you won’t even taste the egg white! If you want even sized, small clusters you can skip the egg.
2 cups Rolled oats
1 1/2 cups Puffed Brown Rice [sugar free]
3/4 cups Cashews
3/4 cups Almonds
1 cup Unsweetened Coconut Flakes
1/2 cup Pepitas
1/2 cup Sunflower Seeds
2 tbsp Coconut Oil [melted]
1/2 cup Honey
1 tsp Vanilla Extract
3/4 tsp Salt
1 cup Dried Fruit — if you like sweeter tasting granola
1 Egg White — if you like your granola to have large clusters, this is a must!
1] Preheat oven to 325 degree + line a baking sheet. Combine all dry ingredients in a very large bowl. In a smaller bowl, whisk together coconut oil, honey + vanilla extract [+ egg white if using] until mixed.
