1 cup Strawberries [diced]
1 cup Mango [diced]
1 Avocado [diced]
1 cup Balsamic Vinegar
Juice of 1 Lime
½ bunch of Basil [roughly torn]
1 tbsp Olive or Coconut oil
4 oz Goat Cheese
6-8 slices of Whole Grain Bread or Baguette
Salt + Pepper to taste
*serves approx. 2-3*
1] Preheat the oven to 400 degrees + line a baking sheet. Brush both sides of the bread with the oil + sprinkle on lil’ salt + pepper. Bake until golden on the outside, but soft on the inside — about five mins per side. At the same time, in a small sauce pan, warm the balsamic vinegar on medium-high heat. Bring to a boil + reduce the heat to a simmer + let the vinegar simmer on medium-low for about 10-15 minutes or until it is the consistency of honey. Remove from the heat + let cool!
