Oh, Halloween [in CHAARG terms — #HALLOWERK] — the holiday that kicks off the start of the “holiday season,” full of delicious + tempting treats. It can be hard [really freakin’ hard!] not to give in to these decadent dishes, but with this yummy protein cheesecake recipe, you can indulge + still make those gainz *arm pump emoji*
#ProteinCheesecake is all over insta right now [seriously – check it out], so I decided to come up with my own creation + woah — is it good. One slice of this pumpkin spiced wonder logs in at under 200 calories + just over 20 g of protein! Although this recipe takes a little time, it is totally worth it. ++ don’t let the ingredient list overwhelm you — most are spices you may already have around! Creamy pumpkin, fall spices, SO MUCH PROTEIN — it doesn’t get better than this. I promise it isn’t a trick ; )
— 2 Scoops Cinnamon Swirl About Time Protein Powder
– 1/2 cup Sweetener [I used Truvia!]
— 1 ½ tsp Pumpkin Pie Spice
— 1 tsp Cinnamon
— 2 Eggs
— 1 tsp Vanilla Extract
— 1 1/2 cup Vanilla Greek Yogurt [I <3 TJs!]
— 16 oz Cream Cheese
— 15 oz Pure Pumpkin
1] Preheat oven to 350° F. Combine all ingredients in a mixing bowl + then stir it up! You can use a hand mixer, stand mixer, fork… whatever gets the job done : )
2] Line a 9” cake pan w parchment paper + pour the mix in.
3] Bake at 350° F for 30 min, then decrease temp to 200° F + bake for another 50 min [or until firm!].
4] Remove from oven when toothpick inserted to center comes out clean ++ let that baby cool! Cover with saran wrap + store in the fridge for a couple hours [overnight is best — ah, I know! but remember, it’s worth the wait!].
5] ENJOY! Top your cheesecake with a lil’ cool whip, pecans, grahams, + dark choco chips — YUM.
