It’s that time of year again! When Autumn rolls in you know what to expect — Pumpkin Spice EVERYTHING ; ). Of course we all love the lattes + the pies, but what if there was a healthier way to enjoy the delicious flavors of fall’s perfect spice? We’ve got ya covered ; ) — what could be better than starting your day off with a pumpkin oatmeal cookie [with no *guilt* to follow]!
A cookie that you can eat for breakfast? You don’t have to tell us twice!
½ cup canned Pumpkin
2 large Eggs
1 cup Quick Oats
1 tsp Cinnamon
1 tsp Nutmeg
1 tsp Baking Soda
⅓ cup Sunflower Seeds + Pistachios [combined]
⅓ cup crushed Almonds
¼ cup light Brown Sugar
2 tbsp Honey
1] Preheat oven to 350°F. In a medium bowl — combine all ingredients, except for the oats + nuts//seeds. Stir until the mixture is smooth + gently fold in the oats.
2] Add sunflower seeds, pistachios, + almonds ++ stir until mixed fully.
3] On a greased baking sheet, spoon the batter into thick cookie shapes [no bigger than your palm] + gently press with a wooden spoon to flatten the tops.
4] Bake for about 20 minutes [check after 15 mins] + let cool… or don’t. ; )
