So — who doesn’t love a warm cookie? Apparently, it’s National Cookie Day today [what a great holiday right!?] so I decided to whip up my own recipe. These peanut butter + jelly inspired treats will satisfy your PB cravings + your sweet tooth — without any refined sugar! 3/4 cup Oat Flour
¼ cup A Loving Spoon Honey Vanilla Bourbon PB
1 tsp Vanilla Extract
1/4 cup Pitted Dates [+3 tbsp Water]
1 Tbsp Flax [+3 tbsp Water]
*optional toppings — [more ; )] A Loving Spoon PB, Jelly, Honey, Hershey Kiss Chocolates
1] Preheat the oven to 350 degrees. Combine flax + 3 tbsp water in a small bowl + stir. Add dates + 3 tbsp of water to a blender or a food processor + blend until a sticky mixture forms. Combine all ingredients in a large bowl + mix.
2] Form cookie dough into small balls + place on a lined baking sheet. Pop in the oven + bake at 350 for 20-25 mins.
3] Once the cookies are done baking + have cooled slightly — press a thumbprint into the top of each to form a small indent. Top each cookie with a bit of A Loving Spoon PB or some Jelly! PB+J in the form of a cookie — yes please!
