The end of the semester is finally in sight, but before we can celebrate, we have to conquer the last hurdle — finals week! Those long hours spent studying are no one’s favorite [to say the least…] + the temptation to eat junk food grows stronger as stress level rises.
It can be really, really tough to stick to your healthy habits when you feel like you’re dedicating all your spare time to final projects + term papers. But, you CAN do this! You CAN beat those late night pizza cravings with just a little planning ahead!
You might be used to meal-prepping for your main meals throughout the week, but the same system works great for snacks, too — especially if you know you’ll be away from home for long periods of time! Taking a little time to prep during the weekend, or as a study break, can help decrease your stress + will help prevent mindless eating. Sounds like a win-win to us! : ) Today, we’re sharing four easy + healthy prepare-ahead snack recipes that are perfect to grab on your way out the door!
COCONUT CHIA ENERGY BITES
We’re crazy for chia ++ if you haven’t noticed yet, we kind of have an obsession with *bites* [have you tried our Vegan Cookie Dough Bites, Vanilla Cran-Coco Bites, or Pumpkin Pie Protein Bites?]. These, particularly, are ENERGY bites [exactly what you guys need for finals week!]. This recipe is super easy + if you buy pre-chopped dried fruit — all you have to do is measure + stir! Perfect if you’re short on time, but want a snack that’ll hold you over until your next meal!

Ahhh, its basically summer, right?! Pina Coladas definitely remind me of summer [have you tried our Pina Colada Smoothie?], but that coconut + pineapple flavor is great in many other forms — like this parfait! You might be thinking this one sounds a little strange, but the ingredients pack one healthy punch! The quinoa + greek yogurt have tons of protein that’ll keep you full + free from the temptation to hit the vending machine. Coconut water is low in calories + delivers more potassium than a banana + is full of electrolytes to help you stay hydrated! Once you try making quinoa with coconut water — you may never go back to your old ways ; ).

I absolutely love oatmeal — there’s so many flavor options + it’s a hearty food that keeps me full + energized! Oats don’t have to be solely a breakfast food either! They’re a perfect simple snack that’s easy to make to prepare for the upcoming week — especially if you bake the oats! This recipe just requires a bit of mixing, which’ll give ya a chance to cross off a few to-do’s while these bake!

If you’re like me, you’ve discovered that granola is super easy to make + tastes amazing on much more than yogurt! You can mix together a batch from ingredients you have right this moment + a little bonus — this recipe is gluten free! This granola has a sweet + salty flavor, with a little hint of coconut. It’s even amazing as a snack all on by itself! I paired the granola with dried apricot + mango to give it a lil’ taste of summer, but you can use any type of dried fruit or skip it altogether. The combo of different ingredients gives it an extra crunch, but the recipe is totally customizable! You can use a single type of nut or seed to suit what you already have!
