We’re crazy for chia ++ if you haven’t noticed yet, we kind of have an obsession with *bites* [have you tried our Vegan Cookie Dough Bites, Vanilla Cran-Coco Bites, or Pumpkin Pie Protein Bites?]. These, particularly, are ENERGY bites [exactly what you guys need for finals week!]. This recipe is super easy + if you buy pre-chopped dried fruit — all you have to do is measure + stir! Perfect if you’re short on time, but want a snack that’ll hold you over until your next meal!
1 cup Rolled Oats
⅔ cup [+ ½ cup to roll the bites in] Coconut Flakes
½ cup Almond Butter
½ cup Chia Seeds
¾ cup dried, chopped Mango
½ cup Honey
1 tsp Vanilla Extract
1] Combine all ingredients into a large mixing bowl + stir until your arms are feelin’ the burn ; ). The mixture is pretty sticky so I recommend popping it in the freezer for 20 minutes before trying to roll into balls!
